Details 👉 toasted wholewheat multigrain bread topped with avocado slices + hemp seeds + cilantro herbs + crispy fried egg (cooked with olive oil in a pan) + spinash leaves + drizzle of olive oil + blackberries + blueberries

4.Ingredients:
1 tsp Ghee or use coconut or avocado oil
1/2 Avocado
1/2 Radicchio or other bitters like chicory
3 Eggs

Recipe:
1. Preheat pan to medium and add 1/2 the Ghee.
2. Thinly slice the mushrooms and add to the pan. Sauté until wilted around 3 minutes. Remove.
3. Whisk the eggs in a bowl and then add the remaining Ghee to pan. Add the eggs and allow to just set before slowly folding in the edge to the middle and repeat clockwise.
4. When cooked 80% through. Turn the heat off.
5. Add the mushrooms back to the pan.
6. Slice the Radicchio + avocado then add to the plate.
7. Season to taste and add any spices + herbs or sprouts for extra flavour.

If you want more calories add some a few more eggs or the other half of avocado.
This is a fat protein focussed meal which I personally enjoy in the earlier part of the day. But that’s just me 😎.

Deets: BURGERS: 1/2 pound cooked salmon (skin removed), 1/3 cup ground tortilla chips (I used @sietefoods), 1.5 tablespoon mayo, 1 teaspoon mustard, 1/4 teaspoon salt, 1/2 teaspoon cumin, 1/4 teaspoon paprika, 1/4 teaspoon garlic powder, 2 tablespoon cilantro, 1 egg yolk, 1/3 cup minced onion. 1️⃣ Use a fork to flake the salmon in a bowl. Add all other ingredients, mix together well until everything is mixed together. Form into 3-4 patties. 2️⃣ Heat 2 teaspoon of oil over medium high and cook about 3 minutes per side. SALSA: 1 cup diced pineapple, 1 cup diced cucumber, 1/4 cup diced red onion, 1 tablespoon chopped cilantro, 1-2 teaspoon minced jalapeño, 2 tablespoon lime juice, 1/4 cup minced red bell pepper, 1/4 teaspoon Salt or to taste. AIOLI: mix together a few tablespoon Greek style yogurt, 2 teaspoon lime juice, chipotle hot sauce to taste and a few dashes of coconut aminos. (I eye balled this). FRIES: same method as four posts back, change seasoning to 1/2 teaspoon salt, 1/2 teaspoon chili powder, 1/2 teaspoon lime zest.

Easy to make, these potato pancakes have loads of flavour and texture with crispy edges and soft warm centers.

The day I took this picture, I stacked up a few crisp pancakes, layered them with spicy mushrooms, tomato chunks, green onion slices, and topped the tower with an avocado boat filled with garlic-ginger-sriracha sauce and a big tangle of sprouts. Flavour bomb extraordinaire. 😋
