Black-eyed Noodle Soup

Coconut Noodle Soup Ingredients

3 tablespoons of olive oil
1 onion – finely chopped
1 medium potato – diced small
1 tablespoon tomato paste
1 tablespoon of chili paste
20 pieces of coriander – crushed in a mortar
Salt
Black pepper
1 teaspoon of curry
1 teaspoon of turmeric
5 glasses of water
½ glass of spinach noodles
Dried mint
2 glasses of dried black eyed peas – karnıkara – boiled

Put your soup pot on the stove, add olive oil and heat it.
When your olive oil is hot, add finely chopped onions and sauté until soft.
Add the potatoes you cut into small cubes and mix.
Add tomato paste and mix for a few turns.
Add spices and mix.
Add water and mix for a turn.
When your water is slightly warm, add your noodles and mix. Close the lid.
After boiling in medium heat until it boils, cook for 20 minutes on low heat.
When your soup is cooked, take it off the stove, divide it into serving bowls and serve hot.
