Ingredients for Dried Fruit Tray Bread Recipe

  • 500 g organic white bread flour
  • 150 g pre-yeast
  • 3 large
  • The yolk of the egg
  • 60 g sugar
  • 60 g butter
  • 230 g cold milk
  • 200 g mixed dried fruit ( Chopped grapes, peaches, pears and apricots)
  • 2 oranges (Grated peel)
  • 1 teaspoon vanilla
  • 30 g water
  • 8 g salt

For pre-yeast

  • 30 g sourdough
  • 70 g flour
  • 50 g water

How to Make Dried Fruit Tray Bread?

  • Take sourdough, flour and water in a jar and mix well with a wooden spoon. Close the lid and leave it at room temperature until it rises 2-3 times and becomes active. This time may take 5-8 hours depending on the air temperature and the strength of the yeast.
  • Take the flour and sugar into the mixing bowl and mix. Then add 2 egg yolks, vanilla, butter, pre-yeast and milk and knead well and leave at room temperature for 30 minutes to rest.
  • Dissolve the salt in water and pour it on the dough and knead the dough with your wet hands until it comes together and has a smooth consistency.
  • Cover the dough and let it rest at room temperature for 1 hour.
  • Oil the counter and open the dough by stretching it with your hands as much as you can. After sprinkling all the dried fruits and grated orange peel, wrap it in the form of a roll and place it in a greased bowl. Wet your hands and fold the dough 4 times at intervals of 1 hour. Open the dough according to the width of the tray, wrap it properly and place it on the tray
  • , put a plate on it and leave it to rise at room temperature until it rises 2 times.
  • The fermentation time will vary depending on the air temperature, so it may take up to 9 hours.
  • Heat your oven at 170 degrees for 30 minutes.
  • Mix 1 egg yolk with 1 tablespoon of milk and Gently rub it on the dough. Bake your bread in the hot oven for about 35 minutes until golden brown.
