  • Flour – All-purpose flour is a sturdy flour commonly used in baking. You could use gluten-free flour, like Bob’s Red Mill, which is a 1:1 substitution.
  • Baking soda and powder – Always check the expiration date for these ingredients to ensure a good rise in the cookies.
  • Salt – Omit if using salted butter in this recipe.
  • Butter – Unsalted butter is best, especially if you include the salt listed in this recipe. If you only have salted butter on hand, omit the salt. Allow the butter to soften at room temperature for easy mixing.
  • Sugar – I’ve used granulated sugar in the cookies, but since the dough will be tinted by the food coloring, you could also use light brown sugar.
  • Egg – Bring to room temperature.
  • Vanilla extract – I’ve used vanilla extract in both the cookie dough and the buttercream frosting. You could use a combination of vanilla and almond extract in these Easter cookies or use almond extract only as a delicious substitute for vanilla extract.
  • Food coloring – You’ll need pink, blue, green, and yellow food coloring to replicate the pretty colors of these Easter sandwich cookies! Feel free to also experiment with other colors.
  • Buttercream frosting – I’ve combined butter, powdered sugar, and vanilla extract to make the frosting for these sandwich cookies. Add a splash of water or milk to the buttercream mixture if it’s too dry to spread easily onto the cookies.

How to Make Easter Sandwich Cookies

You only need to set aside 30 minutes in total to make these stunning and scrumptious sandwich cookies! Here’s how to get started:

Step 1: Prepare

Preheat the oven to 350 degrees F and line a cookie baking sheet with parchment paper. Combine the flour, baking powder, baking soda, and salt in a small bowl and set aside.

Step 2: Make the Cookie Dough

Next, prepare the cookie dough by following these steps:

  1. Beat the butter and sugar in a larger mixing bowl until light and fluffy.
  2. Add the egg and extract and mix.
  3. Slowly add the dry ingredients to the wet ingredients, 1 cup at a time, and beat with a hand mixer.

Step 3: Assemble the Cookie Dough Balls and Bake

Divide the cookie dough equally between 4 bowls and add 4-5 drops of the food coloring to each bowl. Use clean beaters on the hand mixer to fully incorporate the food coloring into the cookie dough.

Tip: You can increase the intensity of the colored dough by adding more food coloring as you mix. Clean the beaters of the hand mixer as you move along to avoid mixing colors in the dough.

The dough will appear to be very crumbly, but you can mold it and press it down, similar to Play-doh.

Scoop a teaspoon of dough and roll it into a ball to place on the lined baking sheet. Repeat this for all of the cookie dough, leaving about 1 1/2 inches apart from each dough ball. Bake the cookies for 8-10 minutes and then allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Step 4: Make the Buttercream Frosting

While the cookies cool, make the buttercream frosting. Beat the butter with half of the powdered sugar, and then add the remainder of the sugar to combine. Add the vanilla extract and beat for about 3 minutes until pale and fluffy.

Step 5: Assemble the Sandwich Cookies

Add the buttercream to a piping bag or zip lock bag with the corner cut off, and pipe the frosting on the bottom of one cookie. Take another cookie and place it on top, pressing it slightly to make a sandwich. Repeat this for all cookies and serve!

Tip: Only frost the cookies once they are completely cool or the frosting will melt and become a runny mess. I have color coordinated the top and bottom cookies of these cookie sandwiches, but you could have some fun and mismatch the cookie tops and bottoms!

  • 2 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1 1/2 cups sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • pink, blue, yellow and green food coloring

For the Buttercream Filling:

  • 2 sticks unsalted butter (softened)
  • 6 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line a large cookie sheet with parchment paper and set aside.
  2. In a medium bowl, combine flour, baking soda, baking powder and salt. Stir well to combine and set aside.
  3. Make the cooke dough. In a large bowl, beat the butter and sugar together with a hand mixer until light and fluffy. Add the egg and vanilla extract, and beat together well. Working 1 cup at a time, slowly add the dry ingredients (from step 2) to the wet ingredients, beating with a hand mixer.
  4. Color the dough. Divide the dough into 4 bowls. Add 4-5 drops of the food coloring to each bowl. Use clean beaters on the hand mixer to fully incorporate the food coloring into the cookie dough, wiping the beaters in between each color to not mix the colors. You can increase the intensity of the colored dough by adding more food coloring as you mix.
  5. Roll the cookie dough into balls. Scoop a teaspoon of dough and roll it into a ball to place on the lined baking sheet. Repeat this for all of the cookie dough, leaving about 1 1/2 inches apart from each dough ball.
  6. Bake the cookies for 8-10 minutes in the preheated oven, or just until the edges barely start to brown. Then, remove from the oven and allow the cookies to cool down for 3-4 minutes on the baking sheet. Transfer cookies to a wire rack to cool completely.
  7. While cookies are cooling, make the buttercream filling. Beat the butter with half of the powdered sugar, and then add the remainder of the sugar to combine. Add the vanilla extract and beat for about 3 minutes until pale and fluffy.
  8. Assemble the sandwich cookies. Add the buttercream to a piping bag or Ziploc bag with the corner cut off, and pipe the frosting on the bottom of one cookie. Take another cookie and place it on top, pressing it slightly to make a sandwich. Only frost the cookies once they are completely cool or the frosting will melt off the cookies. Repeat this for all cookies and serve!

Notes

  • If you find that your buttercream is too dry, you can add a splash of water or milk and mix well with a hand mixer until it becomes the consistency you like.
  • Clean the beaters of your hand mixer in between mixing each color cookie dough.
  • Add more drops of food coloring to the dough as needed to get your desired color.
  • Store leftover cookies in an airtight container in the refrigerator for up to 4 days.
