Easy Gazpacho Recipe Blog with activities for kids

Gazpacho is a refreshing, chilled Spanish tomato soup made with fresh ingredients. This easy gazpacho recipe is served cold, you don’t need to heat up your kitchen to prepare it. Plus, it’s a great way to use up leftover tomatoes from your garden! It’s hearty, earthy, tastes very fresh and aromatic!

Let’s make a tomato gazpacho soup recipe

I’ve tried a few different gazpacho recipes but this one is my VERY favorite. Seriously, I won’t be using any other tomato gazpacho recipes. It’s a simple recipe. This cold soup is perfect for a hot summer day. The perfect way to eat healthy too.

This vegetable soup is made with fresh herbs, extra virgin olive oil and chopped vegetables. This chilled soup is literally the best gazpacho recipe. However, the little secret of this recipe is the little kick it has.

Ingredients for gazpacho soup

  • 5 large fresh tomatoes, quartered
  • 1/2 cucumber peeled and seeded
  • 1/2 red bell pepper
  • 2 cloves of garlic
  • 1/2 red onion
  • 1 TBSP. Coarse salt
  • 1 teaspoon. cayenne pepper
  • 1/2 cup olive oil
  • 1/2 red bell pepper

Tomato Gazpacho Soup Recipe Instructions

Prepare and wash all the vegetables for mixing.

Step 1

Prepare and wash all the vegetables for mixing. Quarter the tomatoes. Peel the cucumber and scoop out the seeds. Remove the seeds from the peepers and cut into quarters. Peel off the outer layer of the red peppers and chop everything.

Process steps 1-3 of the gazpacho soup recipe.
Place all the veggies in a blender or food processor.

Process until the soup is smooth, creamy and finely pureed. Depending on the size of your blender, you may need to do this in two batches.

This summer soup is perfect if you don’t want to cook dinner as it doesn’t require a lot of time or ingredients. Would you like to spice it up? Add some hot sauce!

What to serve best with gazpacho soup

The traditional gazpacho soup recipe is best served with croutons or hot, crusty bread.

My experience of making a gazpacho soup recipe

You can easily use this easy gazpacho recipe as a side dish or make a complete meal out of it. I made that above, along with some salmon. But if you’re feeling fancy, you can serve gazpacho as a first course at a more elaborate dinner! It would be very sophisticated and would take virtually no time to make! The best part is that it tastes even better the next day, so be sure to leave some leftovers!

Tip: You can use the leftover half of your red pepper and cucumber for a pretty garnish on top.

Here’s how to store your easy gazpacho soup

Since tomato season is here, I’m going to be making large batches of this chilled tomato soup with fresh veggies. But how do you store your smooth gazpacho (or chunky gazpacho, if you prefer)?

It is best to keep it in an airtight container and then consume it within a few days. That’s when you have leftovers. My family loves it so much that there’s usually no “next time” or “next day” because we eat it all day.

Nothing beats fresh gazpacho. These are also great recipes for a healthy lunch. Again, store in an airtight container and store in the refrigerator.
