  • 1 ½-2 ½ pounds stew meat
  • 2 tablespoons olive oil
  • 2 garlic cloves, chopped
  • ½ cup yellow onion
  • 6 slices of bacon, chopped
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • 1 (11.2 ounce) bottle of Guinness
  • 4 tablespoons tomato paste
  • 4 cups beef broth
  • 3 carrots or parsnips, chopped
  • 2 sticks of celery, chopped
  • 2 bay leaves
  • 1 teaspoon thyme
  • 3 cups potatoes, peeled and chopped
  • ½ tablespoon Worcestershire sauce
  • salt and pepper to taste

Step 1

Cook bacon in a Dutch oven over medium-high heat until desired crispiness, remove and set aside

Remarks:

Chicken broth can also be used instead of beef. The chicken broth will mask the taste of the Guinness more.

Don’t like the taste of Guinness? You can use red wine to bring out the flavors of all the tasty stuff at the bottom of the pot. If using wine I would also add a bay leaf.

Store from beef goulash meat? Cut up some Chuck Roast and make your own! Brown it the same way, then use Guinness or another strong ale to get that yummy, flavorful stuff off the bottom of the pan.
