Baked potatoes are one of my favorite comfort foods – but they have nothing to do with this easy Twice Baked Potatoes recipe! Twice Baked Potatoes are a creamy combination of warm mashed potatoes mixed with sour cream, butter, bacon, and cheese. This easy twice baked potato recipe is sure to become your new favorite potato side dish.

What is a twice baked potato?

Twice baked potatoes (aka double baked potatoes or jacket potatoes) are exactly what they sound like, ha!

First the potato is baked. Then the insides are hollowed out and combined with delicious ingredients that make them creamier and tastier, before being scooped back into the potato skins to be baked a second time.

How to make twice baked potatoes

My favorite part of this Twice Baked Potatoes recipe is all of the toppings! Nothing is tastier on a baked potato than sour cream and chives—unless it’s bacon and cheese! Yummy!

I love potato dishes because I generally have the simple ingredients that the recipes usually call for!

Ingredients – Twice baked potatoes

  • 6 medium roast potatoes, scrubbed and dried
  • vegetable or rapeseed oil
  • salt and pepper to taste

Filling – Two times baked potatoes

  • ¼ cup (½ stick) unsalted butter
  • ½ cup milk, buttermilk or half and half
  • ¼ cup sour cream
  • 1 ½ cups grated cheddar cheese or your favorite cheese, divided
  • 6 strips of bacon, cooked and chopped
  • 1 tablespoon chives, thinly sliced ​​or green onions
  • 1 teaspoon of salt
  • ½ teaspoon ground black pepper

Serve – Two baked potatoes

  • Fresh Parsley
  • Green Onions
  • chives
  • sour cream
  • salt and pepper

If you don’t have fresh bacon, you can use McCormick Bac’n Pieces!

Instructions – Two baked potatoes

Step 1

Preheat oven to 400 degrees F.
