Fat Ravioli Ingredients
½ packet of dry yeast – 5 gr.
1.5 cups of warm water
1 egg
2 tablespoons of olive oil
2 tablespoons of yoghurt
5 glasses of flour
Salt
Ingredients for Stuffed Mortar
200 gr. ground beef
1 onion – grater
Salt
Black pepper
Red chili flakes
Cumin
Ingredients for Frying
Sunflower oil
Topping Ingredients
Garlic Yogurt
3 – 4 tablespoons butter
1 tablespoon tomato paste
For the dough;
Put the yeast and water in a mixing bowl and mix, melt the yeast and let it sit for 5 minutes.
Add eggs, olive oil and yoghurt into it and mix.
Take your flour in a mixing bowl and open the middle of it.
Add the liquid mortar and knead it first with the help of a fork and then with your hand.
Add salt around the edges and continue kneading.
You can add a little flour if your dough wants.
Put it in your mixing bowl and cover it with cling film and leave it to ferment for 1 hour.
For the stuffing;
Add ground beef, onion, salt, black pepper, chili flakes and cumin in a mixing bowl and knead.
To assemble;
Take your dough on the floured counter and spread it out with flour.
Cut 5 cm squares from your dough.
From the minced meat you have prepared inside. Place the ravioli together. Remove to towel and drain excess oil.
To serve;
Put your ready ravioli on a serving plate.
Mix yogurt and garlic in a mixing bowl.
Melt the butter in a pan.
Add tomato paste to it and fry it lightly.
Serve your ravioli by first drizzling them with yogurt with garlic and then the oil with tomato paste you have prepared.
