- 40 g borage
- 40 g nettles
- 80 g parsley
- 40 g chives
- 40 g cress
- 40 g lamb’s ear
- 1 tablespoon mustard
- 1 tablespoon olive oil
- 200 g sour cream
- 150 g yogurt
- Salt and pepper
- 4 boiled eggs

How to Make Frankfurt Green Sauce?
- Separate the yolk and white of the boiled eggs into two separate bowls.
- To the bowl containing the egg yolks, olive oil, mustard and yogurt are added and whisked with a whisk until it reaches a paste-like consistency.
- Add sour cream, salt and black pepper and mix until a homogeneous consistency is obtained.
- Finely chop the greens and egg whites.
- Mix with the paste you prepared and serve with potatoes. Bon Appetit.
