Ingredients for the Frankfurt Green Sauce Recipe

  • 40 g borage
  • 40 g nettles
  • 80 g parsley
  • 40 g chives
  • 40 g cress
  • 40 g lamb’s ear
  • 1 tablespoon mustard
  • 1 tablespoon olive oil
  • 200 g sour cream
  • 150 g yogurt
  • Salt and pepper
  • 4 boiled eggs
  • For serving; boiled potatoes

How to Make Frankfurt Green Sauce?

  • Separate the yolk and white of the boiled eggs into two separate bowls.
  • To the bowl containing the egg yolks, olive oil, mustard and yogurt are added and whisked with a whisk until it reaches a paste-like consistency.
  • Add sour cream, salt and black pepper and mix until a homogeneous consistency is obtained.
  • Finely chop the greens and egg whites.
  • Mix with the paste you prepared and serve with potatoes. Bon Appetit.
