900 g peeled and seeded ripe tomatoes
1 cucumber, peeled and randomly chopped
2 red peppers, seeded and roughly chopped
2 cloves of crushed garlic
1 onion, roughly chopped
2 tablespoons / 30 ml apple cider vinegar
Half a glass / 120 ml olive oil
4.5 cups / 250 g white breadcrumbs
2 cups / 450 mi ice water
Salt and ground black pepper

4 thick slices of bread, peeled and cut into cubes
2 tomatoes, peeled, seeds removed and diced into small cubes

Gazpacho Soup Recipe

In a large bowl, mix tomatoes, cucumbers, peppers, garlic and onions. Add the vinegar, oil, breadcrumbs and water to the bowl and mix well. Pulse this mixture in a food processor until pureed. Transfer to a large bowl, then add salt and pepper and mix. Refrigerate for at least 4 hours.
