Meatballs with Vegetable Sauce
1 piece celery stalk
400 gr. ground beef
1 glass of bread crumbs or breadcrumbs
For the sauce;
2 – 3 tablespoons of olive oil
½ celery stalk
½ carrot – on a grater
1 red capia pepper
2 cloves of garlic
2 tomatoes – on a grater
1 tablespoon of granulated sugar
2 – 3 sprigs of fresh thyme
1 sprig of fresh rosemary
1 pinch dry mint
2 – 3 glasses of hot water
For the meatballs with vegetables;
Grate the zucchini and carrot with the thin part of your grater.< br/> Grate the skins of your zucchini, you can use the seeds for the sauce.
Squeeze out the juices of the grated vegetables with the help of a cheesecloth and place them in the mixing bowl.
Slice your celery stalk lengthwise and chop it transversely to be very thin and put it in the mixing bowl. .
Grate your onion with the fine side of the grater and add it to the vegetables.
Minced meat, eggs, bread Add bread crumbs, salt and pepper and knead.
Then shape your mince into 50 gram round meatballs.
Put your pot on the stove and add 3 tablespoons of olive oil and heat it thoroughly.
Inside your heated pot Add the meatballs and seal.
Set aside your well-sealed meatballs.
For the sauce;
Add olive oil and finely chopped onion to the pot where you made the meatballs and sauté.
Add finely chopped celery stalk and grated carrot and mix.
Then add finely chopped red pepper and garlic and mix.
Add tomatoes, salt, black pepper, granulated sugar, fresh thyme, fresh rosemary and dried mint and mix.
Add 2 glasses of water to it. Add it and leave all the ingredients to cook.
Make your ready sauce with the help of a hand blender.
* If it’s too thick, you can add 1 glass of water.
Take the meatballs you have set aside in your ready sauce and cook for 15 – 20 minutes until the sauce is well absorbed.
