1 pinch of basil
1 pinch of fresh mint
1 pinch of parsley
2 tablespoons of roasted pine nuts or hazelnuts or walnuts
2 cloves of garlic
1/2 glass of olive oil
1 tablespoon of grated parmesan
Salt and pepper
Cuisine Put all the greens and pine nuts in the robot and mix. If you use walnuts or hazelnuts instead of pine nuts, shred them first in the processor, then add the greens, as they are harder. Then add the garlic and mix again.
Start pouring the olive oil slowly while your robot is running. When all the oil is gone, stop the robot and with the help of a spatula, collect the material that accumulates on the sides in the middle. Add grated Parmesan cheese and mix again. Season with salt and pepper.
You can keep this sauce closed in the refrigerator and serve it with your pasta, potatoes and meat.
