Squash Soup Ingredients
2 tablespoons of butter
1 onion
1 tablespoon of flour
5 medium sized zucchini
5 glasses of water
½ cup strained yogurt
1 egg yolk
Salt
Black pepper
Ingredients to serve
5 – 6 branches dill
Put your soup pot on the stove and heat it.
Add the butter and melt it.
Add finely chopped onions into the melted butter and sauté until soft.
When the onions soften, add flour and fry.
Add the diced zucchini and mix.
Add the water, close the lid of your pot and cook until the zucchini softens.
Pass the cooked zucchini through a shredder to make them smooth.
In a separate mixing bowl, add the egg yolk and strain. Mix the yoghurt.
Add a ladle or two of the soup to this mixture, gradually add it to improve it, and when the mixture heats up, slowly add it to the soup.
Add salt and pepper and add Cook on low heat for 5 more minutes with the lid open.
Sprinkle finely chopped dill on the soup you bought in the serving bowl and serve.
