Pumpkin Soup Ingredients
1 heaped tablespoon of butter
1 large onion
750 gr. pumpkin
¼ nutmeg – grated
1 star anise
5 glasses of meat or vegetable stock
2 tablespoons of cream
Put your saucepan on the stove and heat it.
Put the butter in it and melt it.
Chop the onion into large cubes and sauté until soft.
Add the diced potatoes and mix.
Cube. Add the chopped pumpkins and mix.
Add nutmeg, star anise, salt and pepper and mix.
Then add the meat or vegetable stock and stir.
Close the lid and keep the water boiling until the vegetables are cooked. Keep cooking on high and low heat after boiling.
After the vegetables are cooked, turn off the stove and take the star anise out of the pot.
Put it through the blender and mix it by adding 2 tablespoons of cream.
Take your soup into serving bowls and serve hot.
