Mashed Eggplant Kebab Ingredients
Materials for Eggplant
2 aubergines from the garden
Ingredients for Frying
Sunflower oil
Materials for Minced Stuffing Stuff
5 – 6 tablespoons of olive oil
1 onion – finely chopped
2 cloves of garlic
3 – 4 green peppers
150 gr. minced meat
Salt
Black Pepper
Ingredients for Mashed Potatoes
2 potatoes
100 gr. butter
Salt
White pepper
Nutmeg – grater
2 – 3 tablespoons of milk
Ingredients for Tomato Paste Sauce
1 heaping tablespoons of tomato paste
2 glasses of hot water
2 – 3 tablespoons of olive oil
Toppings
Cheddar cheese – grated
For the eggplant;
Slice your eggplants to be 3 fingers wide.
Gently chop the excess eggplant inside with the help of a Parisian spoon.
Put your pan on the stove and take the sunflower oil in it. Heat it up.
Take your eggplants in your heated pan and fry them.
Arrange your lightly fried eggplants in your rectangular glass baking dish.
For the stuffing with minced meat;
Put your pan on the stove and heat it up.
Add olive oil to it and add the finely chopped onion and sauté until it softens.
Finely chop the garlic and add it to your pan.
Add finely chopped green pepper to it.
Finely chop the insides of your eggplants and add them to your pan and mix.
Add the minced meat to your pan and sauté well.
Add salt and pepper.
When everything is well cooked, take it off the stove.
For mashed potatoes;
Take your pot to the stove and put the potatoes in it.
Add potatoes and water to your pot and cook until the potatoes are boiled.
Take the potatoes in a mixing bowl and mash them with a potato masher.
Add butter, salt, white pepper and grated nutmeg and mix well with a spatula.
If necessary, you can add 2 – 3 tablespoons of milk.
*It is important that your puree is not runny.
Put your mashed potatoes in a squeezing bag with a star tip.
To combine;
Add tomato paste, water and olive oil to a mixing bowl and mix.
Put the stuffing with minced meat you prepared on top of the eggplants in your oven dish.
Drizzle the tomato paste mixture over the minced meat, also on the bottom.
Squeeze the mashed potatoes on them and sprinkle with grated cheddar cheese.
Bake in a preheated oven at 180 degrees for 25 – 30 minutes.
