I love making pancakes for breakfast, but some mornings just don’t have time to play quick order chef! These sheet pancakes come together in minutes. Pour the batter onto a baking sheet and then straight into the oven for the easiest, fluffiest pancakes imaginable.

And they are fully customizable! Bananas, chocolate chips, blueberries, and strawberries—we love getting creative with our favorite toppings. There is always a variety of pancake flavors to choose from.

What is a sheet pan?

A sheet pan is also sometimes referred to as an a baking pan, baking tray or sometimes a rimmed baking sheet, which is why it can be confusing. It is usually a rectangular, flat aluminum pan with a rim all the way around.

Sheet pans come in different sizes. I have a half sheet pan (17″x12″) in this recipe. They’re super versatile and no kitchen is complete without a pair!

Note: A baking sheet can be a very different pan as some don’t have a raised rim unlike a baking sheet.

Quick tip: Don’t mix the pancake batter for too long

When making pancakes, it’s important not to over-mix the batter.

If the instructions say, “Beat just until combined,” that means it’s okay to leave a few clumps. The lumps do not show up in cooked pancakes. But more importantly, mixing until you don’t see any lumps in the batter means you’re also breaking up the air bubbles that make your pancakes light and fluffy.

Over-mixing also activates the gluten in the flour, which can cause your pancakes to be rubbery and flat. And nobody wants a flat, gummy pancake!

How to make sheet pancakes

  • Preheat oven to 350°F. Spray in 17×12-inch half sheet pan Coat with nonstick cooking spray and set aside.
  • Place the flour, baking powder, baking soda, salt, and sugar in a large mixing bowl. Whisk to combine.
  • Make a space in the middle of the flour mixture and add the egg and milk. Whisk until just combined.

  • Gently stir in the melted butter until the batter is well combined.
  • Pour the batter into the prepared sheet pan.
  • Top 1/4 of the pan with strawberry slices, 1/4 with banana slices, 1/4 with chocolate chips, and 1/4 with blueberries. Sprinkle the top evenly with 1 tablespoon granulated sugar.
  • Bake for 20-25 minutes or until pancake has risen, is lightly browned on top and a toothpick inserted in center comes out clean.

  • Cut into 24 squares (6 for each taste) and serve warm with maple syrup.

How to serve and store sheet pancakes

Cut into squares and serve with butter and warm maple syrup.

For cooling leftover sheet pancakes, let cool completely. Then stack them in an airtight container or bag to store in the fridge for up to three days.

Freeze Allow leftover pancakes to cool completely. Then stack them between sheets of parchment paper and place them in a freezer-proof container or individually freezer bags. Store in the freezer for up to two months.

To warm up: When ready to eat, place the slices in a single layer on a microwave-safe plate and heat for about 20 seconds (30 seconds after freezing) or until warmed through. You can also reheat in the oven at 300°F for about 5 minutes (10 minutes from frozen) or until heated through.

  • 1/2 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 and 1/2 cup milk
  • 1/4 cup melted butter
  • maple syrup for serving
