Fried rice with chicken in the pan could be a perfect meal. Crunchy carrots, sweet peas, tender chicken and more of that crispy rice you love. Add sesame oil and soy sauce for the wonderful Asian-inspired flavors and you have an easy weeknight meal that’s quickly becoming one of our favorites.

I am such a fan of fried rice! It has the best flavor and texture combinations! The savory sauce, the sweet carrot. Tender chicken and of course my favorite thing is always the fried rice pieces that give it such a delicious, crunchy texture. Yummy!

Did you know that when you cook fried rice in a sheet pan, you’re exposing a lot more rice to the heat and oil? The result is even crispier, crunchier rice. This is difficult to achieve in a pan or wok!

This skillet fried rice recipe also feeds my whole family (generously). It’s such an easy and efficient way to feed my hungry crowd. Did I mention it’s delicious?

What is a sheet pan dinner?

A sheet pan meal, or sheet pan dinner, is an easy one-pan dinner that you make on a sheet pan! It’s one of my favorite ways to cook dinner for my family without too much effort.

What is a sheet pan? A sheet pan (You will also hear it as a baking pan, baking tray or sometimes a Baking tray with rim(which is why it can be confusing) is usually a rectangular flat aluminum pan with a rim.

Half a sheet pan (that is what i use) measures approximately 17″x13″ or 16″x12. They are super versatile and no kitchen is complete without them! Note: A baking tray may be an entirely different pan as some do not have a raised rim unlike a baking sheet.

Can I use parchment on my pan fried rice? For this recipe, the rice needs oil and the heat of the pan to crisp up and maintain the fried quality. So if you use foil to keep your pan clean, expect your rice to be less crispy.

What do I need to make chicken fried rice from the pan?

  • sesame oil
  • Cooked white long grain rice
  • Boneless skinless chicken breast, diced
  • Onion
  • carrot
  • Garlic

Quick tip: Substitute for sesame oil

If you don’t have sesame oil or are allergic to sesame seeds, there are a few alternatives you can try! Substitute any of the following oils in a 1:1 ratio for sesame oil.

  • peanut oil
  • grapeseed oil
  • avocado oil

How to cook chicken fried rice in a pan

  • Preheat the oven to 400°F. Coat a 16×12 inch baking sheet pan with 2 tablespoons sesame oil.
  • In a large bowl, mix together the rice, chicken, onions, carrots, minced garlic, soy sauce, and rice wine vinegar until well combined.
  • Spread the rice mixture evenly on the prepared baking sheet. Place on the middle shelf of the oven and bake for about 25 minutes until the rice is crispy.

  • Spread the rice on the baking sheet and scrape off any sticking bits.
  • Drizzle the beaten eggs over the rice and stir again. Arrange the rice mixture back into an even layer and sprinkle the peas evenly on top.
  • Place the baking sheet back in the oven and continue to bake until the eggs are cooked, about 10 minutes. Spread the rice out again on the baking sheet.

  • Garnish with chopped spring onions just before serving. Serve with sriracha and soy sauce.

How to store and heat fried rice

Save on computer Store leftovers in an airtight container in the refrigerator for up to 3 days.

Leftover fried rice is great to reheat! Remember, it’s important to reheat the rice until it’s fully steamed. Improperly reheated rice can develop dangerous bacteria. Do not reheat fried rice more than once.

  • For reheating fried rice leftovers in the microwave: Place remaining fried rice and one tablespoon of water for each cup of rice in a microwave-safe bowl and heat at 50% power in 30-second intervals until heated through. Stir between the individual heating intervals to avoid cold pockets.
  • In the oven: Preheat the oven to 325°F. In an ovenproof bowl, add fried rice and 1 tablespoon water for each cup of leftover fried rice. Cover with foil and heat for about 10-15 minutes, or until heated through.
  • On the stove: Heat some oil in a skillet over medium-high, then add the remaining fried rice. Allow to heat thoroughly, stirring constantly, for about 5-10 minutes or until warmed through.
