Salmon Grawlax Ingredients
Materials for Salmon
1 slice of 120 gram salmon
1 level tablespoon of granulated sugar
1 pinch of salt
Juice of 1 beet
Zest of 1 lemon
Juice of ½ lemon
¼ fresh fennel
Ingredients for Salad
1 tablespoon of quinoa
2 glasses of water
¼ red onion
¼ cucumber
1/6 yellow bell pepper
¼ tomato – seed removed
1 finger of celery stalk
1 slice of mango
4 leaves of fresh mint
1 tablespoon of curd cheese
Ingredients for the Avocado Solid
1 pieces of avocado
1 tablespoon of lemon juice

For salmon;
Grate 1 boiled beet.< br/> Squeeze the juice with a cheesecloth, discard the pulp, add the water to the mixing bowl.
Add granulated sugar and salt to it.
Grate the rind of the lemon.
Squeeze the juice of the lemon.
Finely chop the root part of the fennel.
Wash and dry your salmon.
Cut your salmon into small cubes.
Add the salmon to the mixing bowl with the vegetables, mix and leave for 15 minutes.
For the sauce;
Whisk granulated sugar and lemon juice in a mixing bowl.
When the sugar melts slightly, add olive oil and continue whisking.
For avocado;
Peel the skin of your avocado.
Chop into small cubes.
Pour 2 tablespoons of the sauce you prepared over your avocado.
For Parmesan Tuille;
Grate the Parmesan with the fine side of the grater.
Place 1 tablespoon of grated Parmesan in a round shape in your small pan.
Turn your parmesan with a spatula without breaking it.
For the Cucumber Cage;
Remove 7 slices from your cucumbers with the help of a peeler.
Spread the 3 slices on the counter parallel to yourself.
Pass 4 slices from one to the other, vertically, from bottom to top, in a way that they knit into the slices on the counter.
Cut it with a 9 cm round mold and place your cucumber cage on the serving plate.
For serving;
Place the circle on the base of your plate.
Spread the Quinoa mixture you prepared on the bottom of the circle.
Spread the mixed avocado on the salad.
Then place the prepared salmon on the avocado.
Place the prepared parmesan on it.
