This Easy Chicken Enchilada Casserole Recipe is a super easy dinner the whole family will love. This delicious recipe has a little crunch with just enough of the enchilada chewy goodness, filled with Mexican-inspired flavors and the perfect amount of tangy spiciness.

Spicy chicken mixed with creamy cheese, beans, veggies, and soft tortillas, topped with your favorites like sour cream, guacamole, and cilantro. Yummy!

Who doesn’t love a good casserole?! Casserole recipes make for a quick and easy meal that you can put together ahead of time while preparing the week’s meal, or just put together during a busy night.

This is one of my favorite enchilada recipes. Easy chicken enchiladas are awesome and a great way to use up leftover chicken. It’s an easy recipe and a family favorite.

Instructions – Chicken Enchilada Casserole

Step 1

First thing you need to do is preheat the oven to 350 degrees F.

Start by lightly spraying a 13×9 baking pan with cooking spray and set aside.

Then, in a large bowl, stir together the enchilada sauce and salsa.

Reserve 1 cup sauce mix.

Whenever I make enchiladas or tacos, I love to serve them with delicious bean and rice dishes! Why not have more of a good thing, am I right?!

  • The Tex-Mex salad with black beans and corn is the perfect side dish for your chicken enchilada casserole! Just add some guacamole and a squeeze of fresh lemon or lime juice – YUM!

  • I also love making a big pot mexican rice, to! It mixes well with the black bean and corn salad.

How to store your enchilada casserole

Do you have any enchiladas left? Well, you can store leftover sauce in an airtight container or freeze it.

The enchiladas should be eaten within the next few days. You can wrap it in aluminum foil or place it over your casserole dish or place in an airtight container.
