No matter what time of year, I always feel like comfort food – for example a hearty potato soup. This is the BEST crockpot potato soup recipe and it won’t disappoint!

Whether you’re sick, it’s a chilly night, or you’ve just had a rough day, a steaming bowl of this creamy, flavorful potato soup is like a hug to your soul.

Crockpot soups are the best as they require minimal prep and can simmer away while you’re working or running errands. There’s nothing quite like opening the door and entering a home filled with the inviting aroma of homemade potato soup!

I know most people think of “chicken soup” when they’re sick, but to me there’s nothing quite as comforting as a rich potato soup with lots of melted cheese on top!

My favorite part are the toppings! You can garnish your potato soup with anything that sounds good. Some of my favorites are: bacon bits, chives, sour cream, scallions, and cheese.

Crockpot Potato Soup is made with fairly simple fridge and pantry ingredients: potatoes, broth, sour cream, heavy cream, cornstarch, onions, and spices (making this the perfect recipe to see you through to a grocery shopping trip).

  • 6 slices of bacon for serving, optional
  • 1 small onion, diced
  • 2 pounds potatoes, peeled and diced into ½-inch cubes
  • 3 cups chicken broth or broth
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cornstarch
  • 2/3 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup cheddar cheese, grated and on top for serving

Portion:

  • Green Onions
  • Bread, crackers or other toppings of your choice

The best part of the whole recipe! Fry some bacon.

Cut the bacon into 1 inch pieces and in a medium skillet over medium-high heat, sear the bacon until crispy and remove from the pan, reserving the bacon grease. Reserve as a topping for the soup.

Next, sauté the diced onions to add more flavor to the dish. That’s the only caveat with potato soup – it can easily be very bland. Don’t be shy with the spices!

Add diced onions to the pan and cook until tender, about 2-3 minutes.

Then the crockpot starts doing all the work for you!

In a 6-quart crockpot, add the potatoes, cooked onions, chicken broth, salt, and black pepper and stir.

Once the soup base is done cooking, it’s time for some spices and toppings!

Place the lid on the slow cooker and cook on high for 4 hours or on low for 6-8 hours, or until potatoes are tender.

When the potatoes are soft, use a potato masher or hand blender to lightly mash about half of the potatoes. The more you puree, the thicker the soup will be.

Use a potato masher to ensure you get the creamiest potato soup.

In a small jar with a lid, shake the heavy cream and cornstarch until smooth, about 1 minute.

Pour the cream mixture into the Dutch oven with 1 cup cheese and sour cream and mix well.

Place the lid back on the saucepan and allow the soup to heat on high for about 20 minutes until thickened.

Recipe notes for this Slow Cooker Potato Soup

This rich baked potato soup is great, but feel free to add any of your favorite toppings. If you don’t like bacon or scallions, there are many other things you can add to this awesome recipe. I personally like some leeks on top.

You can use whatever potatoes you have on hand, whether they are russet potatoes, Yukon gold potatoes, or red potatoes. All potatoes are the best potatoes.

Don’t eat pork and can’t have bacon bits? That means you can use shredded chicken as a topping.

Although this soup has a thick broth, it’s still perfect for dipping rolls. Adds extra flavor to your rolls when dipping!

How to Store Crockpot Potato Soup

Do you have any soup left? Don’t waste that creamy broth! Allow the soup to come to room temperature before putting it away.

To maximize the shelf life of your crockpot potato soup, be sure to store it in an airtight container.

Potato soup can be stored in the refrigerator for 3-5 days. If you freeze your soup, it will keep for up to 6 months.

Vegan Crockpot Potato Soup recipe

Are you vegan or dairy free? This Crockpot Potato Soup recipe can easily be modified to make it both dairy-free and vegan!

Recipe without dairy products:

To make dairy-free crockpot potato soup, substitute plant-based versions for heavy cream, sour cream, and cheese.

Silk has a heavy plant-based whipping cream. Tofutti makes a delicious, dairy-free sour cream. Daiya and Follow Your Heart have lots of delicious vegan cheese shavings to choose from.

Vegan recipe:

Follow the dairy-free recommendations above, but also skip the bacon altogether (or substitute tempeh or a vegan sausage like Beyond Meat sausage). Instead of chicken broth, try Edward & Sons Not Chick’n Stock Cubes.
