Ingredients for the Cretan Çullama Recipe
For the dough
- 12 square puff pastry dough
- Half a tea glass of flour
Stuffing
- 200 g boiled chicken breast meat
- 3 pieces of chicken or turkey liver
- 15 g butter< li>1 tea glass of chicken broth
- 1 glass of rice
- Half a glass of raisins
- 1 glass of ground walnuts
- 1 teaspoon of black pepper
- 1 teaspoon of cinnamon
- Half a teaspoon of crushed cloves
- 1 teaspoon of cumin
- Half a teaspoon of nutmeg< /li>
- Salt
For the topping
- 2 tablespoons of oil
- 1 egg
How to Make Cretan Çullama?
- Chop the chicken and liver into cubes. Melt the butter in a pan and fry the livers.
- Add chicken broth, rice, salt and pepper, cover the pan and cook for 15 minutes.
- Add chicken, raisins, walnuts, cloves, cumin and nutmeg and mix. Cook for 2 more minutes and remove from the stove.
- Take the puff pastry on a floured surface and thin it out with a rolling pin. Spread 6 squares of puff pastry on the bottom of an ovenproof glass bowl. Add the chicken mixture on it and cover with the remaining puff pastry.
- Mix the egg and 2 tablespoons of vegetable oil in a bowl and brush on the puff pastry. Bake in a preheated 200 degree oven. Serve hot or warm.
