Ingredients and Substitutes
20 large Medjool dates – You need large dates for this recipe. Otherwise, you will not be able to fill them up well.
1 cup goat cheese – I love goat cheese. And combined with dates, let’s just say you’ll have to try this mix to see what I’m talking about. Make sure not to use it straight from the fridge so it’s softer.
1 cup desiccated coconut – The coconut sprinkle on top is more for a fancy garnish and a bit of a sweeter bite. But you can substitute it with something else, like finely chopped nuts.
1 ¾ blueberries – Let’s just admit how beautiful these deep-colored dots look against the whiteness of the cheese. They can be omitted, but I strongly suggest otherwise.
How to Make Goat Cheese Stuffed Dates
Step 1. Cut your dates in half lengthwise and remove their seeds.
Step 2. With a teaspoon, fill the date halves with the goat cheese. Then, stuff the cheese with 1 tsp desiccated coconut. Make sure to press it on with your finger so it doesn’t fall off.
Step 3. Add two blueberries on top of each date, making sure to press gently.
What Other Cheese Can You Use for the Dates?
If you don’t have (or don’t like!) goat’s cheese, you can use other cheese varieties for stuffing gates. However, soft cheese is the key to making the perfect appetizer.
The best alternatives here would be feta cheese, ricotta, or cream cheese.
