Ingredients for Creme Caramel Recipe

1 + 1/4 cup (250 g) granulated sugar
4 tablespoons (60 ml) water
2 dessert spoons vanilla
1+2/3 cup (400 ml) milk
1 cup (250 g) whipped cream
5 eggs
2 egg yolks

How to Make Creme Caramel

Put 1 – 7/8 cups of sugar (1 75 g) in a saucepan and add 4 tablespoons of water to dilute it.

Boil for another 4-5 minutes until the sugar in the pot starts to boil, without stirring, until it turns into a dark caramel color.
2 – Without cooling the caramel, immediately pour it into a 4 cups deep soufflé mold. Hold the mold with oven mitts and turn it left and right so that the caramel spreads to the edges (the caramel freezes and hardens immediately when it cools). Put the mold on a small baking tray.
3 – Preheat the oven to 160 degrees. In a medium pot; Add the vanilla, milk and cream and bring to a boil, stirring frequently. When it boils, take it off the heat, cover it and keep it aside for 15-20 minutes.
4 – In a bowl; Whisk the eggs, egg yolks and remaining sugar for about 2-3 minutes, until the mixture has a paste-like consistency and the lumps disappear. Whisk the hot milk as well and mix it carefully into the mixture. Then pour the whole mixture into the caramel mold and cover it with foil.
5 – Place the mold on a tray filled with hot water so that it reaches half of the mold. Bake the cream caramel in the oven for 40-45 minutes. Bake until the top is well browned and the caramel separates 5 cm from the rim of the tin.Remove from oven and let cool for at least 30 minutes. Then leave it in the refrigerator overnight.
6 – Separate the cream from the mold with a knife from the edges and carefully invert it onto the plate. Hold the serving plate you turned upside down firmly and gently hold the mold with the plate. As the caramel slides onto the plate, move it slowly so that it spreads across the plate.
